No, No and No, Not If We Can Help It

Degree of difficulty:Medium



125g butter
3/4 cup castor sugar
2 eggs
1 3/4 cup SR Flour
2/3 cup milk
1 tspn vanilla

3cups icing mixture

1 tspn butter
1 tspn vanilla
1 tbspn cocoa
desert spoon of golden syrup


Cream butter and sugar. Add vanilla, add eggs one at a time. Add flour alternatively with milk.

Pour mix into a greased lamington slab tin, 11 inches by 7 inches and bake in a moderate oven for about 30 minutes.

After it's thoroughly cooled cut into four centimetre by 4cm pieces. Wrap cake in foil and put in the freezer.

Put icing in a double boiler - over boiling water.

Then put a lamington on a fork and ladel icing over the top until covered, hold it while it drips then roll in fine coconut.

Dry on cake rack with greaseproof paper over the top of it, or underneath to catch the coconut.

Mix all ingredients together then add a dash of boiling water to mix to a running consistency, but not too runny.

TIP: When transporting Lamingtons put extra coconut at the bottom of the container to prevent sticking to the bottom.

    While I have to admit I some times wish they would have non food based fundraising at school and have a healthy option for lunch orders, I am a little irritated by the insistence of this healthy food drive by the government.
    My daughter goes to a very small school (67 kids) this means we don't have a canteen. We have what is called 'Monday Munchies' - every 2nd Monday one of the mums or dads goes and hands out a pre-ordered recess and lunch. The selections are not healthy, but it is once a fortnight. We do not have the space or the facilities to prepare food so it has to be bought in. We have had to change all this around and now sourcing 'healthy' options - which is not easy. Does this mean the end for Monday Munchies and Lamington Drives? I hope not.
